Coco-Banana Smoothie

Super easy super fun to make!

What you'll need:
Water and meat from 2-3 Young Coconuts
2-3 Bananas
Vanilla bean seeds to taste.
1/2 cup - 1 cup of fresh nut or seed milk.
1 tbs date paste~soaked dates pitted and blended until smooth.

Blend all ingredients on low until smooth.

Enjoy!

This brownie was amazing.

Thick & creamy topped with hemp seeds.


This company does an outstanding job making these little brownies. A bit pricey compared to generic brands, but very much worth the purchase.

Quick Lunch



This photo is from a past lunch. I used one ear of corn, half of an avocado, and half of a tomato. For the topping I broke up some flax seed crackers, nori seaweed, hemp seed oil, lime juice, and some sea salt. This salad took just a couple minutes to make. :)

Local Beauties


Hey everyone! Just thought I'd share some photos of the local foods I have available over here in Upstate New York...


I broke my camera recently so I haven't been able to take photos of my food creations! Yesterday I made an interesting pudding out of raw plantains and wild blueberries... some people say you can't eat plantains raw, but if you wait until the peel gets black it is edible like a banana. My pudding came out really thick and creamy... I'll have to make it again for you when I get a new camera. ;-)

Taste Test: One Lucky Duck's Cheese-y Quackers

OK, I have been busy!! Not posting up too many recipes! I am eating a lot of salad and fresh fruit lately which is great but I like to try different snacks that remind me of things I used to eat.

Cheese-y Quackers taste VERY similar to cheeze-it's, they cost more, but they are worth trying out and won't make you feel as icky. I PROMISE!

The almonds in the cracker give them the creaminess, the nutritional yeast the makes them cheesy, and the spices used are what make them taste the most like a cheeze-it cracker.

Well the only way you will believe me is if you try them out yourself. They look different, are a bit harder(because they are dehydrated, not baked)but the taste is there.

If you are new to eating raw I would recommend these for you, and if you have friends and family that you would like to eat healthier, go on and pick up a pack.

Veggie Sushi

Hey Folks.
I make these rolls whenever I have the nori sheets available. :-)

Ingredients:
1 nori sheet
1 avocado sliced
1 handful of baby spinach leaves
2 tbs of ruby red sauerkraut
some added sea salt or dulse flakes.

First Learn...
How to roll sushi.
Then place the spinach leaves where you would place the rice on your sheet. Add your other ingredients. Follow the instructions from the above link.

The sauerkraut I used to make these rolls is crafted locally about 5 minutes away from where I live, which is nice. :) You can add any veggies you like to your rolls.
I like using spinach instead of rice, it bulks/puffs the rolls out, & adds nutrition. :) I could live on these rolls!

Green Grape Juice

Recipe:
2-3 cups of organic green grapes.
1 bunch of collard greens, or kale greens.
Juice ingredients in your juicer.

Raspberry Cashew Ice Cream


Recipe: 8-10 Servings
2 cups of raw cashews that have been soaked for a couple hours in water.
20-25 dates that have been soaked in water overnight & pitted.
2-3 cups of water
1/4 teaspoon of vanilla powder
1/4 teaspoon of sea salt
3 cups of frozen raspberries (you can probably use fresh, but this is what I had on hand. :) )

Directions:
Blend all ingredients for a few minutes in your blender until very smooth. Then put into your ice cream machine. >as an option you can also put in 1/4 cup of chopped raspberries.

Pepper Lime Portobello Mushrooms with Wilted Spinach Leaves

This dish was so simple to make!
Time: Less than 20 minutes. Serves 2-3 People.

Recipe
Spinach Bed: 1. Start by measuring out 3 cups, or a half pound of spinach leaves.
2. Coat the leaves with 1-2 teaspoons of hemp seed oil & a pinch or two
of ground sea salt. (You could also use seaweed, or dehydrated celery powder
instead of salt.)
3. Wilt the spinach.
Option A. Use a mixing bowl and spoon. Stir and press the
leaves for a few minutes until they break down.
Option B. You can use your hands to rub and massage the leaves
together until they wilt.
~My spinach leaves weren't completly wilted, but you can mix & press as much as you like
to get the "cooked spinach" texture.
Marinated Mushrooms: 1. Start with 4 large fresh Portobello Mushrooms.
2. De-stem, clean, and peel the mushrooms.
3. Slice the mushroom caps into strips as thin or as thick as you like.
4. Marinate the mushrooms in:
2-3 tablespoons of hemp seed oil
lime juice from 1 lime
a few good shakes of fresh cracked black pepper
sea salt to taste.
All you need is just a few minutes for the mushrooms to pick up the flavors, but
you can let them marinate for as long as you like.

Simple Salad

I just made this salad the day before yesterday.
I am trying to eat cleaner
now with the weather change. I think this is normal in the
spring time? I have thought about just juicing....although I am
not really sure yet...we'll have to see. :)
Here is the recipe for the salad:
2 Large handfuls of baby spinach, for me that is probably about 2 cups.
a few sliced mushrooms
1 handful of cherry tomatoes, about 10 or so
5-8 sun dried olives, pitted & sliced
fresh basil leaves Chiffonade, (to your taste)
fresh dill sliced, (to your taste)
1/2 teaspoon sesame seeds
dressing
juice from 1/2 lemon
juice from 1/2 orange
sea salt to taste

Toss all ingredients together~ :)

Avocado, tomato, red cabbage, sesame seeds & lettuce. For dressing I used lemon juice, sea salt & hemp seed oil.

Chocolate Smoothie


This is a smoothie I like to make for my family & friends...& for me too :-)
~~Recipe~~
1 cup of water
2 ripe bananas
1/4 teaspoon of sea salt
3 tablespoons of raw cacao powder, or carob powder
1 cup of ice
and a sweetener, you can use coconut water instead of water, or add in soaked dates, or stevia leaf, or whatever you like. :-)

Sesame Date Rolls


recipe~
Start yourself with some very soft dates that have been sliced in half & pitted.....your going to want them soft so the sesame seeds stick on better... :)
(I think it is best to get dates that have pits in them because I have gotten dates with no pits & have found small bugs inside! :(
next roll the date halves out so they are flat.
then dip them into a cup or container full of sesame seeds & the seeds will stick.
last, roll them up & share!

Blueberry Smoothie

water, about 1/2 blender full

3 ripe bananas
1 to 2 cups of frozen blueberries
sweetener of your choice, I used stevia liquid drops (1 dropperful)
a lil green, I used powder because I was out of spinach & kale.
raw vanilla powder

blend all until smooth.

♥Gingerbread cookies~these cookies taste EXACTLY like gingerbread cookies! (but with a fruity hint) Chewy, sweet, full of flavor...

Orange Chocolate Pecan Cookie....This cookie tastes JUST like a fresh chocolate chip cookie, but with a little bit of fruit. The chocolate pieces were like real (kind of bittersweet) chocolate chips!
